May's menus

so, the 2 week shopping thing did not work for me...cat was away for a good 3 weeks of that time and I did not get to go back to commissary... so we are back to the 31 day thing and I spent about 1 1/2 hours getting menus together... here we go: and I decided to catagorize it according to speciality, cause I do not go by days anyway... am tired tonight, will post links from where I got the recipes and I will also post the side dishes and veggie sto go with each one... night all

Timothy's birthday...

so yesterday was Timothy's birthday...this is how we celebrate birthdays since the "kids" have gotten older and mostly buy what they want...so we take them out to eat on the day of their birthday, their choice and then the next day, I put balloons outside with banners, etc and then I make them their dinner of their choice... so for Tim, he chose to go to San Manual and we had the buffet lunch, we love it there...they came and sang to him with a piece of cake, etc. and he also won "big"...he like me does not gamble, so once we win, we cash out immediately...so that was a good time, and I have not been out of the house since the cat was away so much this past month... so, onto today...his favorite dinner hands down is beef stroganoff, so I made him that and Sam and Zozo made him peanut butter and jelly cupcakes... and to top it off, he came to tell me goodnight and "thanks so much for making my weekend so good..." well......I guess I can do something right after all...

turkey & bacon wraps

very hot here in Riverside today and it is only April...I hate summer with my whole heart...I really do...Tim went out to lunch with a coworker and the sign on the bank building that is usually spot on, read 108, tho I have to say it did not quite feel THAT hot... tho, I did have one of my worst migraines today...you know when you wake up like around 3 or so and you have that all too familiar pain on the side of your head...you have had it long enough, you know...and you know what kind of day you are in for and I had a lot to do today... but with the cat still away, the cat might be away but the mice surely were not in a playing mood...left the house very early to get a start before the heat hit and got what we needed from the store and got home, put shorts on and got the house prepared to get it cooled down... have to say, the house was pretty quiet today...Chris worked today and Sam went out to lunch after work and Zoe got home and went straight home for awhile so I was able to rest in between making dinner for everyone...let me just say that I love for Tim to have a good dinner done by the time he gets home from work and since it was so hot, I wanted a treat for him... problem? achieving my goals while being as sick as I felt... dinner: turkey & bacon wraps, with cheese, lettuce, onions, olives, tomatoes homemade macaroni salad deviled eggs non bake cheesecake with cherries Sam and Zoe came over for dinner, Sam did help with eggs and Tim cleaned up and washed most of the dishes... pretty good night, called the cat and watched that Betty White show that punks people with old people...hey, don't judge I needed a laugh today... I am depressed and overwhelmed with all that is going on in my life and tonight did make me feel a little better so then Zozo and me went for an ice cream...maybe part of my overwhelming-ness is cause I have been held a captive in the house while he has been hospitalized...

cat's away dinners...

my here we go once again "cat's away" posting of dinners...

Thursday night I made a tortellini & Italian sausage soup, made up my own recipe, and before I post it, want to tweek it just a tad, there were some things I liked and some I was not so crazy about...loved the idea tho...

Friday night, cat's first night in hospital, we had taco casserole as leftovers and may I say that OMGoodness, it is sooooo yummy as leftovers...since then I have been
craving it for every night but, alas, no more to be had...

Saturday, Tim bought him and me chinese food for a late lunch and then we had tuna melts like at 8pm...never like to eat that late but they were so yummy...

today, Tim is getting us Panera and I plan on making cheese fondue for dinner...

tomorrow night is the night the other grandma comes with the kids and I plan on making my homemade chicken pot pie for dinner...

2 posts in one...


Monday night, Debbie the little's grandma was coming up with the kids for an appointment and I know she doesn't always have time for a home cooked meal, so I decided to make dinner for them and they could eat with us...what to make for a big crowd?
mini meat loaves
bacon & cheddar mashed potatoes
green beans
biscuits...
and dinner was a hit...
I made the bisquick version of mini meat loaves, love this meat loaf and have sort of adopted it as my own...even people that say they hate meat loaf, love this one...
and I put the meat loaf in muffin tins and the kids loved that...Sian even asked to take the leftovers home with her...
she loved the potatoes and said, she had never tried them with bacon before (my kind of girl)...

for Tuesday I told everyone to eat leftovers or whatever they wanted...
for Wednesday, my version of taco casserole...oh & cranberry/orange muffins...
the picky princess loves this and makes her own little bowl of it...

taco casserole

brown 1 1/2 pounds of hamburger
add 1 can cut up olives
1 pkg frozen corn
cheese to taste
1 pkg McCormick taco seasoning
a couple of handfuls of crushed tortilla chips

mix and put in 9 x 19 pan, cover with shredded cheese, bake 400 approx 30-40 minutes...

new menus for April

decided that we would start going shopping for 2 weeks instead of a month...my house is so small, and I do not have a pantry and it was getting rough finding places for all of the groceries for a whole month so, that being said, we went to the commissary and I still spent approx $300 for 2 weeks...but we were out of just about everything...with the antler obligation, we ate out quite a bit over the course of a year...so, we were out of mayo & peanut butter & all of my basics like that...so for the menus here goes:
4-8....tacos, refried beans
4-9....spaghetti, salad, garlic bread
4-10...taco casserole, cornbread
4-11...chicken pot pie, cranberry sauce, muffins
4-12...swedish meatballs, noodles, veggie
4-13...ham, cheddar potatoes, green beans, applesauce bread (THIS IS OUR EASTER)
4-14...meatball soup, crusty bread
4-15...meat loaf, twice baked potatoes, corn pudding, peas
4-16...beef, bacon, barley soup, bacon & cheese pull aparts
4-17...mock lasagna, garlic breadsticks, antipasto sticks
4-18...tortellini & sausage soup, cheddar bay biscuits
4-19...macaroni & cheese, little sausages, veggie, biscuits
4-20...layered chicken bake, homemade applesauce

most of these menu items I chose cause they are some of Zoe's faves and she likes making her own little versions of the dinner...

so last night, I was tired and did not feel 100% so made the easiest dish and it was
my meatball soup...
in case I did not post about this prev. here is how I do it...

meatball soup

2 pkgs. of McCormick's beef stew seasoning mix
1 pkg of frozen meatballs
1/2 pkg uncooked egg noodles
1 pkg frozen peas

in 6 cups of water, add the seasoning mixes, set to boil, add the meatballs...once boiling add the noodles, boil till noodles are al dente...add the peas at the end...
serve...

everyone loves this soup, incl. picky princess who added her's over white rice that I had already made up ahead when she was hungry for lunch...

I will next go shopping on April 20th and hope to have a ton of coupons cut out at that time...

easy peasy dinners...

I have tons and tons to blog about but since I had that bronchitis thing that was going around and Ross (well everyone knows about him, right?) having a pacemaker and all, we have been kinda busy...also with that lymph node thing...
so we have been taking it slow with super easy dinners...

last night, I made chicken salad, and it turned out so good, what do I put in mine?
chicken of course, cranberries, apples, celery, walnuts and mayo...we had on these really soft potato rolls, with veggies and tator tots...

then tonight? eggg salad...
