cheesy bacon mini meat loaves with homemade garlic mashed potatoes

still trying very hard to use what meat we have in the freezer before moving...and I had a pretty hectic day and really did not want to make a "big" dinner but I had 2 pkgs of ground beef out and decided to go ahead and make meat loaf and mashed potatoes...my heart was not in it today...but I forged ahead and everyone was happy with dinner...

my meat loaf, the one I have searched high and low for is kind of little pieces of this and that, collected from different recipes...
I like the Bisquick recipe, but need to add to that one...

so this is what I do:

probably 3 pounds of ground beef (sometimes I like to add Italian sausage too)
2 eggs
1 cup of Bisquick
seasonings (I add pepper, garlic salt and onion powder) people in this family do not like chunks of            onion
BBQ sauce
shredded cheese
and cooked diced bacon

I make them into patties and bake them for about 30 minutes at 375...

roast beef sandwiches for a friday night dinner

I have been craving a really good pot roast, that you cook all day in the slow cooker but I am trying really hard to use up what we have in our freezer so, we don't have to move it full...but, I still was craving...so I was at the grocery store when they were putting out their day old meat and I said to myself if there is a roast, then it was meant to be...low and behold there was...

so I put it on to cook on Thursday on low in the slow cooker with onion soup and I forgot about it, in fact, it woke me up at 1 am and I jumped out of bed to turn it off...(silly me)...
so on Friday I decided to just have sandwiches with it and it was so good and tender, perfect for sandwiches...

roast beef sandwiches and I found these really nice soft buns that just melted in my mouth
green salad
tator tots

great dinner for Tim and I to catch up on some of our DVR'd shows...

cheesy beef and rice casserole

this recipe really interested me and usually when I use a new recipe, I follow it to a T...
I did not do that this time, however...I do not have a lot of time to play around right now...

so, while I was doing this, I decided to change a few things and everyone loved it...

along with the cream soup, I added a couple of spoons of sour cream and half of a small can of tomato sauce for color...I added some seasonings and I did not add the carrots...

otherwise I stayed with directions and it is very good...

I will definitely make this again...

start of simple meals (getting ready to move) sloppy joes

going to go off of posted menus for a bit here since I am trying to still keep a clean house, a nice yard (yeah right) and laundry and everything else that has to happen for a family...now, add in looking for a new place to live, which is not proving very easy at all...then, cleaning out and packing...I am very overwhelmed to say the least...just did not think I could keep up with big meals too...so I am pulling out all of my super easy recipes, that also feed a lot of people or leave big leftovers...

oh please wish me luck with all of this...at least this week, I am on Spring Break, so can get a little more done than usual...

I am super worried that I am not going to get done in time...I have not even found a new place to go to...I would feel better about all of this, if I at least had a new place to go...

so, tonight was sloppy joes...I use the McCormicks seasoning mix and doubled the recipe...everyone loves this and there was still some to save...I decided to let everyone put whatever they wanted to go with it...no sense heating up oven either, when it was 98 in Riverside today...too hot to make tator tots today...

peas ham and creamy noodles on Friday night

this is my favorite go to recipe for leftover ham...and we had plenty of leftovers from Easter...
I have made this several times and love how easy it is to prepare...

everyone likes it in the family...

I did not follow the menu planner at all this week...we got some disappointing news on Tuesday and I am pretty depressed and it was so much easier to eat out this week and then we were leaving for a very short planned and already paid for trip to Catalina...if it had not already been planned for, there would have been no way to go...

we have rented this house for 15 years and is all my 4 grandchildren know...we got a call Tuesday night that they want to sell the house and gave us 60 days to move...do not know where we will go or how to go...all I know is that I have so so so so much to do before 5/31...and I do not even have a plce to go yet...I had found a house that I really really liked, but they said no...I wanted it so badly, that I dreamed about it and thought where I would put my things...big mistake...so back to the drawing board...very sad...

so for the next foreeable future, I will be cooking easy recipes only since I have so very much to do...
