baked sausage & risotto

I made this for dinner tonight: (well it won't let me copy and paste tonight) so, baked sausage and risotto (you get my version...) I browned italian sausage and added one minced onion and garlic till done...added 1 1/2 cups of arborio rice to sausage mixture and only browned the rice for 1 minute...I then added 4 2/3 cups of chicken broth and brought to a boil...added 2 grated onions and put into a greased casserole pan, covered and baked at 350 for 30 minutes...stir and bake for additional 30 minutes...melt 2 tbs of butter and add to 1 cup of panko bread crumbs along with some parmesan cheese...sprinkle on top and bake additional 10 minutes or until browned... Yummy...next time would add frozen peas also...recipe is from BHG and called for fennel and artichoke hearts...

taco salad

this is my all time favorite warm weather dinner... taco salad is what I made for dinner tonight as it was in the high 80's here today, rather warm...but, silly me let me describe how I eat my taco salad... I take the browned hamburger, sprinkle some cheddar cheese on top, add some diced tomatoes, some green onions, black olives, some crushed corn chips and mix it all up with some ranch dressing... YUMMY... I always over eat with this dinner...

back to reality

it's been awhile posting cause I have been so busy...bowling & banquets & initiations & installations & parties and more parties and then all capped off with the big inaugural ball last night (which was truly magical) I knew I would have to come back to reality sometime and sometime was tonight... dinner for tonight was; homemade roasted chicken and wild rice soup and quick Brazilian cheese rolls (that I got from www.ourbestbites.com)... must say that dinner was pretty yummy... the tapioca flour was hard to find, but I did finally find it at Whole Foods (we do not have one around us but my mother in law does) and let me add that Tim and I fell in love with the store and we would be in big trouble if there was one around here...very cool store...
